It took me a while to figure out a process for this, because tools for this sort of thing aren't as plentiful for Mac as they are for PC, but I've finally got a system down. Is there any interest or need for a how-to guide for Mac users who would like to re-chapter (or create chapters where there are none in some cases), trim/edit an .m4b (to remove Audible tags at the beginning and end, or previews for other books, or whatever), and tweak metadata without re-encoding? All of it done on novice-level apps, no need to understand how to use ffmpeg or python etc?

If so, I can throw one together, but only if there's a need or interest.

All right, then. Here it is. I decided to do it as a video instead of trying to write it all up, hopefully it's reasonably easy to follow.
